The Shoulder (Paleta in Spanish) has become increasingly popular in Spain as a more affordable, smaller size option to the rear ham. 
Our Iberico Shoulder is 50% Iberian breed. The meat is leaner and with less infiltrated fat than the hams, but still has the characteristic Iberico flavour.
